Sicilian (5-day pan)

Serves 4-6 people

Our Sicilian style pizza dough is aged for 5 days, then panned up to rise again in our cast iron pans for 6 hours. Coming out of the oven as a thick crust, the characteristics of a Sicilian style pizza is to have a crispy almost fried-like outer crust, with a delicate and and airy center.

New York (flat)

Serves 3-4 people

Our New York inspired thin crust is hand tossed with with a thin and crispy crust around the pizza, still soft and pliable to be folded in half while holding in its toppings. The dough is aged for a minimum of 72 hours.

DETROIT (PAN)

Serves 3-4 people

Detroit style pizza is a pizza In the pan division category. It is traditionally baked in a steel pan that resembles the parts pans that  were seen throughout Detroit during the automotive boom. It’s most famous for its caramelized cheese crust know as the Frico. This pizza has the application of sauce applied after the pizza is baked. The sauce runs down the pizza in two lines to resemble tire tracts of the auto mobile industry .
